Instrucciones

Blend the yoghurt and ice cubes together, until the yoghurt becomes more liquid. Add sugar to taste. The lemon/lime is optional but it gives it a slightly tart taste. Dash of salt. Raita is also good for the summer. Instead of having a traditional salad you can make raita instead.

NonAlcoholic Creamy Savory Refreshing

History & Origins

Raita is traditionally a yogurt-based condiment in Indian cuisine used to cool the palate alongside spicy dishes, and this drink version represents a liquefied adaptation of that concept. The addition of lime juice rather than lemon reflects South Indian and Sri Lankan influences on the recipe. As with all lassi variations, the exact origin is disputed within the broad tradition of Indian dairy beverages.

Tasting Notes

Aroma: Cool, tangy yogurt with a fresh lime citrus note and a hint of salt. Palate: Light and refreshing — yogurt's tang is softened by the sugar's sweetness and brightened by lime's citrus tartness, while salt adds a savory counterpoint that enhances all other flavors. Finish: Clean and cooling, with a lingering citrus-yogurt freshness.

tangy citrus cooling lightly sweet refreshing

Pro Tip

Blend briefly with ice until frothy and serve immediately; the pinch of salt is essential as it enhances both the sweetness and the tang.
