IBA NewEra Citrus Refreshing

History & Origins

The Paloma's origin is disputed, with some accounts crediting Don Javier Delgado Corona of La Capilla bar in Tequila, Jalisco, and others pointing to the widespread use of grapefruit soda mixed with tequila as a common Mexican practice predating any formal codification. The name "Paloma" means dove in Spanish, though the exact reasoning for this name is unclear. The drink has surpassed the Margarita in popularity within Mexico itself.

Tasting Notes

Aroma: Citrusy and sweet from the grape soda with a clean agave note from the tequila. Palate: Bright and effervescent with the sweet-tart grapefruit character of the grape soda meeting the earthy, peppery quality of the tequila; refreshingly light and easy drinking. Finish: Clean and fruity with a pleasant tequila warmth and a gentle sweetness.

Pro Tip

Use a grapefruit-flavoured soda such as Jarritos Toronja or Squirt for the most authentic flavour, and salt-rim the glass with coarse sea salt to enhance the grapefruit notes.
