History & Origins
Daiquiri was reportedly created around 1898 near the town of Daiquirí in Santiago de Cuba by American mining engineer Jennings Cox, who improvised with the local ingredients available — rum, lime, and sugar — when he ran out of gin to serve to American guests. The cocktail was later refined and popularized by Admiral Lucius Johnson, who brought it to the Army and Navy Club in Washington DC. The IBA recognizes it as a classic.
Tasting Notes
Aroma: Clean, fresh lime zest and the light tropical sweetness of white rum, with a neutral, slightly sweet background note from the sugar. Palate: Bright and tart from the lime, with the rum providing a clean, smooth warmth; the sugar balances the acidity without adding perceptible sweetness beyond harmony. Finish: Crisp, refreshing, and clean, with a lime and rum fade.
Pro Tip
Shake hard with plenty of ice for at least 15 seconds to achieve thorough chilling and dilution, and always use freshly squeezed lime juice — the bottled variety will not produce the same result.
