History & Origins
The Tipperary cocktail first appeared in Hugo Ensslin's 1916 bartending guide, making it one of the earliest documented cocktails to feature Irish whiskey as a base spirit. It was created against the backdrop of World War I, a period when the song 'It's a Long Way to Tipperary' was the most famous marching song among Allied troops. The IBA later incorporated it into its New Era Drinks category in recognition of its modern relevance.
Tasting Notes
Aroma: Irish whiskey's smooth grain and light oak, sweet vermouth's dried fruit and herbaceous notes, and the distinctive herbal complexity of green Chartreuse — pine, mint, and floral. Palate: Rich and herbal, with Irish whiskey providing a smooth, slightly sweet backbone; sweet vermouth adds wine depth and fruit, while Chartreuse delivers a layer of botanical complexity that elevates the drink far beyond a simple whiskey Manhattan. Finish: Long and herbal, with lingering Chartreuse, vermouth sweetness, and whiskey warmth.
Pro Tip
Express a wide swath of orange peel over the drink and discard it rather than using it as a garnish — the oils add aroma without the peel's bitterness.
