A South American spirit distilled from fermented grape must (the pressed skins and juice), producing a clear, aromatic spirit with floral, fruity notes and earthy character. Peruvian and Chilean piscos differ subtly in style. Pisco is the star of the Pisco Sour, where it pairs with lime and egg white.
