History & Origins
The Hemingway Special was created for Ernest Hemingway at La Floridita bar in Havana, Cuba, where bartender Constantino Ribalaigua Vert adapted the classic Daiquiri to Hemingway's preferences — reportedly doubling the rum and adding grapefruit juice to replace sugar, as Hemingway was diabetic. The IBA recognizes it as a Contemporary Classic. The 'Papa Doble' name refers to Hemingway's nickname.
Tasting Notes
Aroma: fresh grapefruit citrus and lime with rum and a faint floral, cherry note from the maraschino. Palate: tart and assertively citrus-forward with grapefruit's bitter edge and lime's sharp acidity, balanced by the rum's sweetness and the maraschino's subtle almond-cherry character. Finish: dry, citrusy, and slightly bitter with a long, clean rum and grapefruit fade.

Omit added sugar as Hemingway preferred, relying on the rum's natural sweetness and the maraschino to balance the grapefruit and lime — adjust to taste with a small amount of simple syrup if the tartness is too pronounced.
