Rolling
IntermediateGently pouring a cocktail back and forth between two vessels for light mixing without aeration.
所需工具
如何操作
1. Combine all ingredients in one shaker or vessel. 2. Hold a second shaker or glass in the other hand. 3. Pour the liquid in a slow, controlled arc from one vessel to the other, raising the pouring vessel steadily higher as you go. 4. Transfer the liquid back to the original vessel in the same arcing motion. 5. Repeat 4–6 times until the drink is chilled and lightly aerated. Tip: The arc should be about 12–18 inches for ideal aeration without making a mess. Rolling is ideal for Bloody Marys and tomato-based drinks where some oxidation improves flavor. Common mistake: pouring too fast, which causes spills and over-aerates the drink.
专业技巧
Roll the cocktail gently between two shaker tins 4-6 times, pouring from one to the other at a short distance of about 6 inches. This technique is ideal for thick, savory drinks like the Bloody Mary where you want mixing without the frothy aeration that shaking produces. Keep the pour controlled and smooth — the goal is to integrate ingredients evenly while preserving the drink's body and texture. Always roll with ice in the receiving tin to chill the drink during the process, then strain into a fresh glass.
常见错误
Rolling too vigorously introduces excessive air, creating unwanted frothiness in drinks like Bloody Marys that should have a smooth, dense body. Too few rolls leaves ingredients poorly integrated, resulting in pockets of concentrated tomato juice or spice that taste unbalanced from sip to sip. Pouring from too great a height splashes liquid outside the receiving vessel, creating a mess and losing precious cocktail volume.
