The Jack Rose is one of the most celebrated American cocktails of the early 20th century, appearing in Prohibition-era literature and memorably referenced in Ernest Hemingway's 'The Sun Also Rises.' Its name is disputed — theories link it to the jacrose apple variety, the gangster Bald Jack Rose, or simply the drink's rosy color. It flourished in New York speakeasies during Prohibition.
