Salt

Sodium chloride used in cocktails both as a rim coating and occasionally as a direct ingredient. A salt rim on a Margarita glass enhances the citrus and agave flavors through contrast. Small pinches of salt in cocktails suppress bitterness and enhance sweetness, a technique used in some Daiquiri recipes.
