Clover Club is an IBA-recognized Unforgettable cocktail that combines gin with grenadine, fresh lemon juice, and egg white in a recipe that exemplifies the frothy, fruit-accented gin sours of the pre-Prohibition era. At 12.21% ABV, it is a moderately strong cocktail with a bright pink color, a pillowy foam head from the dry-shaken egg white, and a balance of gin botanicals, raspberry-pomegranate sweetness, and citrus tartness. Its revival in the modern cocktail renaissance has reestablished it as a benchmark classic.
History & Origins
Clover Club takes its name from the Clover Club, a Philadelphia men's literary and arts club that met at the Bellevue-Stratford Hotel from the 1880s. The cocktail was served there and became strongly associated with the pre-Prohibition cocktail culture of Philadelphia's gentlemen's clubs. After Prohibition decimated gin cocktail culture and egg white drinks fell from fashion, the recipe was largely forgotten until the cocktail revival of the 2000s brought it back to prominence.
Tasting Notes
Aroma: Bright lemon zest, the floral sweetness of grenadine, and the juniper and botanical character of gin, with a neutral egg-white cream above. Palate: Fresh and lively — tart lemon and the botanical depth of gin are united by the pomegranate-raspberry sweetness of grenadine; the egg white creates a silky texture throughout. Finish: Clean and medium-length, refreshing and gently sweet.

Dry shake vigorously for a full 30 seconds before adding ice to ensure a dense, stable foam that holds its structure well after straining.
