Wormwood

A bitter herb from the Artemisia absinthium plant, historically used to flavor absinthe and vermouth. Wormwood's bitter, herbal character (from thujone compounds) was the basis for absinthe's mystique and legal controversy. Today it is used in small amounts in artisan bitters and aperitivos.

Flavor Profile

Intensely bitter, herbaceous nose with dried herbs, camphor, and musty earthiness. Palate is sharply bitter with vegetal, medicinal depth. Pungent, drying finish with lingering bitterness.
